Fake Pasta

The hubs gets some brownie points for this one!

He knew it sucked for me to be on this challenge of ours because it means no pasta for me. Well, he found a compromise: Cucumber pasta.

fake pastaEverything was made from scratch. It sounded strange at first, but it tasted pretty awesome. I still love actual pasta. Think I’ll have some this week now that the challenge is over.

Update on challenge: besides weight loss, I feel so much better and have so much more energy! Which is a good thing since I never sleep…with school and work taking over and all.

Eh foods

As I’ve mentioned, we have been doing the Whole30 challenge to get back into shape and feel better in general. Some of the things we ate were pretty awesome, some were a bit boring but still a good meal. On school days, I don’t always have access to a microwave. Therefore, I get boring meals like the salad below:

but I prefer my bacon.

Seconds

Normally, I don’t eat much. I eat a decent size portion every meal. Unless it’s pasta. I would get seconds, sometimes thirds when it comes to pasta. If there’s other ingredients, I normally get stuffed at roughly 1.5 plates/bowls. Just pasta and I am hungry enough, I could finish a third round. Good thing I like working out!
